Bunny Burgers (Makes 4 / 5 Burgers) |

Ingredients |

1 rabbit (completely boned and minced)
1 large onion (chopped finely or minced with the rabbit)
2 cloves garlic (crushed)
1 egg
1 heaped tbsp ground almonds
1 tbsp wholegrain mustard (I use Tracklements Dill & Mustard sauce)
1 tsp cumin seeds
2 tsp ground black pepper
1 tsp smoked paprika
1 tsp salt

Method |

• Mix the egg well with all the spices and the mustard. This prevents all the spices ending up in one mouthful.
• Add the onion, garlic and minced rabbit. Mix well. Add the ground almonds and mix again.
• Take handfuls of the mixture and shape into burgers. Don't make them too thick - 1 cm is fine. Place on a grill pan.
• Grill for 10 minutes, then turn over and grill for a further 5 minutes.
• The egg and almonds hold the mixture together and keep it moist, but there will be very little fat in the burgers, so don't let them overcook.
• Serve however you like them, in a bap or with chips. "Bunny Burgers" are a great way to introduce children to rabbit meat.
